Instructions
- Preheat oven to 400°F (200°C).
- Season chicken breasts with salt and pepper. In a skillet over medium heat, add olive oil and sear chicken until golden brown on both sides (about 5 minutes each).
- Add baby potatoes around the chicken in the skillet. Transfer to the preheated oven and bake for about 20 minutes, or until chicken reaches an internal temperature of 165°F (75°C).
- Meanwhile, melt butter in a saucepan over medium heat. Add minced garlic and sauté until fragrant (about 1 minute). Pour in heavy cream and stir well.
- Lower heat, then mix in grated Parmesan cheese and dried herbs, stirring continuously until the cheese melts into a creamy sauce.
- Retrieve baked chicken from the oven, pour the creamy sauce over it, garnish with chopped parsley, and serve.
