  • 1 lb baby potatoes
  • 4 cloves fresh garlic, minced

  • 1 tsp dried Italian herbs (oregano and thyme)
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season chicken breasts with salt and pepper. In a skillet over medium heat, add olive oil and sear chicken until golden brown on both sides (about 5 minutes each).
  3. Add baby potatoes around the chicken in the skillet. Transfer to the preheated oven and bake for about 20 minutes, or until chicken reaches an internal temperature of 165°F (75°C).
  4. Meanwhile, melt butter in a saucepan over medium heat. Add minced garlic and sauté until fragrant (about 1 minute). Pour in heavy cream and stir well.
  5. Lower heat, then mix in grated Parmesan cheese and dried herbs, stirring continuously until the cheese melts into a creamy sauce.
  6. Retrieve baked chicken from the oven, pour the creamy sauce over it, garnish with chopped parsley, and serve.
