- 2 cloves fresh garlic, minced
- 1 cup panko breadcrumbs
- 1 cup marinara sauce (homemade or store-bought)
- ½ cup freshly grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 3 tbsp olive oil
- Salt & pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- In a bowl, beat eggs with salt and pepper. In another bowl, mix panko breadcrumbs with grated Parmesan cheese.
- Dip each chicken breast in the egg mixture, then coat generously in the breadcrumb mixture.
- Heat olive oil in a skillet over medium heat. Sear each breaded chicken breast for 3-4 minutes on each side until golden brown.
- Place seared chicken in the baking dish, cover with marinara sauce, and top with shredded mozzarella.
- Bake for 20-25 minutes until the cheese is bubbly and golden.
