  • 4 boneless, skinless chicken breasts
  • 2 cloves fresh garlic, minced
  • 1 cup panko breadcrumbs
  • 1 cup marinara sauce (homemade or store-bought)
  • ½ cup freshly grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 3 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. In a bowl, beat eggs with salt and pepper. In another bowl, mix panko breadcrumbs with grated Parmesan cheese.
  3. Dip each chicken breast in the egg mixture, then coat generously in the breadcrumb mixture.
  4. Heat olive oil in a skillet over medium heat. Sear each breaded chicken breast for 3-4 minutes on each side until golden brown.
  5. Place seared chicken in the baking dish, cover with marinara sauce, and top with shredded mozzarella.
  6. Bake for 20-25 minutes until the cheese is bubbly and golden.
