  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Stir in melted butter, egg, and vanilla extract until combined.
  4. In another bowl, mix flour, sugar, baking soda, cinnamon powder, and salt.
  5. Gradually fold the dry mixture into the wet ingredients until just combined; avoid overmixing.
  6. For the cinnamon swirl, combine ¼ cup sugar with 1 tablespoon cinnamon in a small bowl.
  7. Pour half of the batter into the loaf pan; sprinkle half of the cinnamon-sugar mixture on top. Add remaining batter and swirl with a knife gently.
  8. Bake for about 60 minutes or until a toothpick comes out clean. Let cool slightly before slicing.
