  • 1/2 cup grated Parmesan cheese
  • 1/2 cup plain breadcrumbs
  • 3 garlic cloves, minced
  • 4 oz cream cheese, softened
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil (for sautéing)
  • Salt and pepper, to taste
  • 1 cup low-sodium chicken broth

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, mix ground turkey, chopped spinach, breadcrumbs, minced garlic, Parmesan cheese, cream cheese, Italian seasoning, salt, and pepper until well combined.
  3. Roll the mixture into uniform meatballs (about 2 tablespoons each) and place on a lined baking sheet.
  4. Bake for 20 minutes until golden brown and cooked through.
  5. In a saucepan over medium heat, warm olive oil and add chicken broth; bring to a simmer.
  6. Stir in remaining cream cheese until smooth and creamy; gently add baked meatballs to the sauce and simmer for an additional 5-10 minutes.
