  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • 1 tsp ground cinnamon
  • ½ tsp freshly grated nutmeg
  • Salt and pepper to taste

Instructions

  1. Prepare the butternut squash by peeling and cubing it into bite-sized pieces.
  2. In a skillet over medium heat, sauté diced onions and minced garlic until translucent (about 5 minutes).
  3. Add the cubed squash to the crockpot along with sautéed onions and garlic.
  4. Pour in vegetable broth and coconut milk, then add cinnamon, nutmeg, salt, and pepper. Stir well.
  5. Cook on low for 6-8 hours or high for 3-4 hours until squash is tender.
  6. Blend the mixture until smooth using an immersion blender or in batches with a standard blender.
