  • 3 cloves fresh garlic, minced
  • 1/2 cup low-sodium soy sauce
  • 8 oz lo mein noodles
  • 1 cup bell peppers, sliced (mixed colors)
  • 1/4 cup green onions, chopped
  • 1 cup vegetable broth
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch

Instructions

  1. Chop the chicken into bite-sized pieces and mince the garlic.
  2. In a bowl, whisk together soy sauce, vegetable broth, sesame oil, and cornstarch until smooth.
  3. Place the chicken in the bottom of the crockpot. Pour the sauce mixture over it and add sliced bell peppers and minced garlic.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Cook lo mein noodles according to package instructions about 15 minutes before serving.
  6. Once the chicken is cooked through, gently stir in cooked noodles and chopped green onions. Let sit for an additional 5 minutes.
