  • 6 slices bacon, cooked and crumbled
  • 1 large sweet onion, diced
  • 4 cups low-sodium chicken broth
  • 8 oz cream cheese (block)
  • 1 cup shredded sharp cheddar cheese
  • 2 green onions, sliced (for garnish)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by washing and peeling the potatoes. Dice them into bite-sized cubes.
  2. Cook the bacon in a skillet over medium heat until crispy. Remove from heat and let drain on paper towels.
  3. Add potatoes, crumbled bacon (reserve some for topping), onion, chicken broth, garlic powder, onion powder, salt, and pepper to the crockpot.
  4. Cut cream cheese into cubes and add to the mixture.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until potatoes are tender.
