Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, oats, ginger, cinnamon, baking soda, and salt.
  3. In another bowl, cream together butter, brown sugar, and granulated sugar until fluffy.
  4. Beat in eggs one at a time along with vanilla extract until combined.
  5. Gradually add dry ingredients to wet mixture while stirring gently.
  6. Scoop dough onto prepared baking sheets about two inches apart.
  7. Bake for 10-12 minutes or until edges are golden brown. Cool on wire racks.
  8. For the filling, beat cream cheese until smooth and mix in powdered sugar if desired.
  9. Spread cream cheese filling between two cooled cookies to assemble.
