  • 4 whole wheat tortillas (large)
  • 2 cups fresh lettuce (chopped)
  • 1 cup diced tomatoes (ripe)
  • 1 avocado (sliced)
  • 1 cup shredded cheese (cheddar and mozzarella mix)
  • ½ cup plain Greek yogurt
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Juice of 1 lime

Instructions

  1. Preheat a skillet over medium heat with a splash of olive oil. Season chicken breasts with salt, pepper, cumin, and paprika. Cook for about 7-8 minutes per side until golden brown and cooked through.
  2. While the chicken cooks, chop the fresh lettuce, dice tomatoes, and slice the avocado.
  3. In a small bowl, mix Greek yogurt with lime juice, salt, and pepper to taste.
  4. Lay out tortillas flat on a clean surface. Slice cooked chicken into strips and place in the center of each tortilla along with lettuce, tomatoes, avocado slices, shredded cheese, and drizzle sauce on top.
  5. Fold the sides of the tortilla over the filling then roll tightly from bottom to top. Serve immediately or wrap in foil for later!
