- 1 avocado (sliced)
- 1 cup shredded cheese (cheddar and mozzarella mix)
- ½ cup plain Greek yogurt
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- Juice of 1 lime
Instructions
- Preheat a skillet over medium heat with a splash of olive oil. Season chicken breasts with salt, pepper, cumin, and paprika. Cook for about 7-8 minutes per side until golden brown and cooked through.
- While the chicken cooks, chop the fresh lettuce, dice tomatoes, and slice the avocado.
- In a small bowl, mix Greek yogurt with lime juice, salt, and pepper to taste.
- Lay out tortillas flat on a clean surface. Slice cooked chicken into strips and place in the center of each tortilla along with lettuce, tomatoes, avocado slices, shredded cheese, and drizzle sauce on top.
- Fold the sides of the tortilla over the filling then roll tightly from bottom to top. Serve immediately or wrap in foil for later!
