Ingredients
- 9 no-boil lasagna noodles
- 2 cups fresh spinach
- 2 medium zucchinis, thinly sliced
- 1 cup cremini mushrooms, sliced
- 3 cups marinara sauce
- 15 oz whole milk ricotta cheese
- 2 cups shredded whole-milk mozzarella cheese
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Prepare zucchini, mushrooms, and spinach.
- In a skillet over medium heat, add olive oil and sauté garlic until fragrant. Add zucchini and mushrooms; cook until tender.
- In a bowl, mix ricotta cheese with oregano, basil, salt, and pepper.
- In a baking dish, spread marinara sauce on the bottom. Layer noodles, sautéed vegetables, ricotta mixture, more sauce, and mozzarella. Repeat layers until ingredients are used.
- Cover with foil; bake for 30 minutes. Remove foil during the last 15 minutes to brown the cheese.
- Let cool for 10 minutes before slicing.
