  • 2 medium sweet potatoes (about 1 lb)
  • 3 tbsp Dijon mustard
  • ¼ cup pure maple syrup
  • 3 tbsp extra virgin olive oil
  • 2 tsp fresh rosemary or thyme (or 1 tsp dried)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. In a bowl, whisk together Dijon mustard, maple syrup, olive oil, and chopped herbs to create the marinade.
