  • 1 cup fresh raspberries
  • 3 large egg whites (room temperature)
  • 1 cup granulated sugar
  • 1 tsp cornstarch
  • 1 cup heavy whipping cream (cold)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 200°F (95°C) and line two baking sheets with parchment paper.
  2. In a clean bowl, whisk egg whites until frothy, then gradually add sugar, whisking until stiff peaks form.
  3. Fold in cornstarch and vanilla gently.
  4. Pipe or spoon heart shapes onto baking sheets and bake for about 1 hour until dry but soft inside. Turn off the oven and let cool completely.
  5. While meringues cool, puree raspberries and strain if desired.
  6. Whip cold cream to soft peaks; fold in raspberry puree and sugar until well combined.
  7. Once meringues are cool, fill each heart with raspberry mousse using a spoon or piping bag.
