  • 34 boneless, skinless chicken breasts
  • 8 oz spaghetti
  • 1 can (10.5 oz) cream of chicken soup (low-sodium)
  • 1 cup sour cream (or Greek yogurt)
  • 2 cups shredded sharp cheddar cheese
  • 1 green bell pepper (diced)
  • 1 medium onion (diced)
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • ½ cup breadcrumbs for topping (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a large baking dish with nonstick spray.
  2. Cook spaghetti according to package instructions until al dente; drain and set aside.
  3. In a skillet, sauté diced onion and bell pepper over medium heat until softened (about 5 minutes).
  4. In a large bowl, mix shredded chicken, cooked spaghetti, cream of chicken soup, sour cream, chili powder, paprika, salt, pepper, and half of the cheddar cheese.
  5. Pour mixture into the baking dish, top with remaining cheese and breadcrumbs if desired.
  6. Bake for 25-30 minutes or until bubbly and golden brown.
