  • 1 cup fresh cranberries (chopped)
  • 1 cup breadcrumbs (plain or seasoned)
  • 1 medium onion (finely chopped)
  • 1 cup celery (diced)
  • ½ cup low-sodium chicken broth
  • 2 tsp fresh thyme (or 1 tsp dried)
  • 2 tsp fresh sage (or 1 tsp dried)
  • 2 large eggs
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a skillet over medium heat, sauté diced onions and celery in olive oil until softened, about 5 minutes.
  3. In a large bowl, combine ground turkey, chopped cranberries, breadcrumbs, sautéed vegetables, eggs, herbs, salt, and pepper. Mix until just combined.
  4. Shape mixture into golf ball-sized spheres and place them on the prepared baking sheet about two inches apart.
