  • 16 oz cream cheese, softened
  • 1 cup sour cream

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs and melted butter until crumbly. Press into the bottom of a springform pan and bake for 10 minutes. Let cool.
  3. Beat softened cream cheese until smooth. Gradually add sugar, then mix in sour cream and vanilla.
  4. Add eggs one at a time, mixing slowly after each addition.
  5. Pour the filling over the cooled crust and bake for 50–60 minutes until set but slightly jiggly in the center.
  6. Cool in the oven with the door ajar for an hour before chilling in the fridge for at least 4 hours or overnight.
