  • 2 tsp garam masala
  • 1 cup coconut milk (full-fat)
  • 2 tbsp vegetable oil or ghee
  • Juice of 1 lemon (about 2 tbsp)

Instructions

  2. Stir in minced garlic and ginger; cook until aromatic, about 1 minute.
  3. Add cumin seeds, turmeric powder, garam masala, and chickpeas. Cook for 5 minutes until well-coated with spices.
  4. Gradually incorporate spinach; stir until wilted down (3-4 minutes).
  5. Pour in coconut milk, mixing gently; simmer for about 10 minutes to thicken the sauce.
  6. Finish with fresh lemon juice to elevate flavors. Serve with steamed rice or warm naan.
