  • 2 ribeye steaks (about 8 oz each)
  • 2 tbsp unsalted butter
  • 1/4 cup fresh parsley, finely chopped
  • 2 large Russet potatoes (about 1 lb), peeled and diced
  • 1 cup green cabbage, shredded
  • 1/4 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium-high heat. Season ribeye steaks generously with salt and pepper. Cook for 4-5 minutes on each side until browned. In the last minute, add butter and baste the steaks.
  2. While steaks rest, boil diced potatoes in salted water for about 15-20 minutes until fork-tender. Drain.
  3. Return potatoes to the pot, add shredded cabbage, heavy cream, and remaining butter; mash until smooth but slightly chunky.
  4. Stir in chopped parsley and adjust seasoning to taste.
  5. Plate steaks alongside generous scoops of colcannon, garnishing with extra parsley if desired.
