  • 8 oz fresh cremini mushrooms, sliced
  • 4 cups low-sodium vegetable broth
  • 2 tbsp soy sauce (low-sodium)
  • 1 tbsp fresh ginger, minced
  • 3 cloves garlic, minced
  • 8 oz fresh ramen noodles
  • 2 green onions, sliced (for garnish)
  • 1 tbsp toasted sesame oil (plus more for drizzling)
  • 2 soft-boiled eggs (optional)

Instructions

  1. Prepare the mushrooms by cleaning and slicing them into bite-sized pieces.
  2. In a large pot over medium heat, combine vegetable broth, soy sauce, ginger, and garlic. Bring to a gentle boil while stirring occasionally.
  3. Add the sliced mushrooms to the bubbling broth and cook for about 5 minutes until softened.
  4. In another pot, boil water and cook ramen noodles according to package directions until al dente.
  5. Drain noodles and divide them among serving bowls. Ladle the mushroom broth generously over the noodles.
  6. Top with sliced green onions and drizzle with sesame oil. If using eggs, slice them in half and place on top before serving.
