  • 1 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 cup diced apples (Granny Smith or Honeycrisp)
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
  2. Melt the butter in a medium saucepan over low heat. Remove from heat and stir in brown sugar and granulated sugar until glossy.
  3. Beat in eggs one at a time, followed by vanilla extract until smooth.
  4. Gently fold in flour, baking powder, cinnamon, and salt until just combined.
  5. Fold in diced apples until evenly distributed.
  6. Pour batter into the prepared pan and bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
